Korean Cucumber Side Dish

sesame oil 1/2 teaspoon
sesame seeds 1/2 teaspoon
chili pepper powder 1/2 teaspoon more or less to your taste
salt a pinch to soak and a pinch to season in the end Thinly slice cucumbers with a mandolin or by hand. Put the cucumbers in a colander and place the colander in a big bowl. Sprinkle the cucumbers with a pinch of salt coating every slice and let it sit for about 30 minutes until most of the liquid has released from the cucumbers. While your waiting on the cucumbers you can combine all the seasonings together in a bowl. After about 30 minutes rinse the cucumbers in cold water to get rid of most of the salt. Then squeeze the cucumbers to release all the liquid and place back in a bowl. Combine the seasoning mixture to the cucumbers and mix it all up making sure to coat the cucumbers evenly. This dish does need to be spicy and salty and nutty from the sesame oil and sesame seeds. The cucumbers will still have some natural liquids coming from them so that will dilute the salt a little bit. Do a taste test and see if you need to add more salt or other seasonings to your liking.
