And subscribe: Korean Grilled Eggplant Side Dish is one of our favorite go-to side dishes for healthy lunch boxes, bentos or for midnight snacks. It is a “fail-proof” recipe that you can whip-up with minimal effort and basic pantry essentials. The marinade sauce is based on soy-sauce and does not use any fish sauce either. I, myself, was not a big fan of eggplant until recently. It was this side-dish that I had at a restaurant which made me reconsider what eggplant could taste like.
