for 6 kabobs
1 pound sirloin steak tips
1 large yellow bell pepper cut into large pieces
Grape Tomatoe
1/4 red onion cut into larger pieces
olive oil spray salt and pepper. Assemble kabobs. Spray or brush with olive oil. Season with salt and pepper. Grill for about 4 minutes on each side. Chimichurri:
1 large handful chopped cilantro
1 large handgul chopped parsley
1 teaspoon dried oregano
1 Tablespoon olive oil
1 Tablespoon red wine vinegar
salt and pepper to taste Mix all ingredients and serve over steak kabobs. Spinach Salad with Poppyseed Dressing:
1 pound baby spinach
3 stalks celery, sliced
3 green onions, sliced
15 ounce can mandarin oranges, drained
1 cup shredded mozzarella
1/2 cup slivered almonds
1 Tablespoon sugar In a small skillet, saute almonds and sugar until golden brown. Allow to cool. For salad, add baby spinach, celery, green onion and mandarin oranges to a large bowl. At serving time, add oranges, cheese and almonds. Top with dressing. Poppy Seed Dressing: 1/3 cup sugar
1 teaspoon dry mustard
5 Tablespoons vinegar
1 teaspoon salt
1 1/2 teaspoons grated onion
1 cup grapeseed or canola oil
1 1/2 teaspoon poppy seeds Whisk together sugar, vinegar, dry mustard and salt. Slowly whisk in oil. Add poppy seeds and grated onion. Broccoli Salad: https://www.foodnetwork.com/recipes/trisha-yearwood/broccoli-salad-2065359 Breakfast Sausage Casserole: 1 pound ground sausage
1 cup milk
1 cup shredded cheddar cheese
1 tsp. dry mustard
6 eggs
6 slices bread
1 tsp. salt Brown and drain sausage. Remove crust from bread and cube. In a large bowl, beat eggs. Add all ingredients and mix well. Pour into a greased 13×9 baking dish. Bake at 350 degrees for 50 minutes. Cut into squares to serve. *This is best if prepared and refrigerated the night before then baked in the morning.
