St. Joseph Zeppole – Zeppole San Giuseppe Fried and Baked and Sfingi

A must!!! Recipe below! I made 2 batches of the dough, one for the zeppole and one for the sfingi! I got about a dozen big sfingy and 8 big zeppole out of each batch! For the custard:
2 & 1/2 cups of Whole Milk4 Egg Yolks4 Tbsp of Granulated Sugar4 Tbsp of All Purpose Flour
2 Tbsp of Cornstarch
1/8 tsp of SaltZest of 1/2 of a Lemon For the dough:
1 cup of water
8tbsp (1 stick) of Unsalted Butter 4 Tbsp of Granulated sugar Zest of 1/2 lemon
1 cup of Flour
Pinch of salt
3 Eggs For the sfingi filling: 2 cups of Ricotta or Whole Milk ricotta drained overnight over a sieve in the fridge
1/2 cup of Granulated Sugar
3/4 cup of Mini Semisweet Chocolate Chips
1/4 tsp of Cinnamon, optional
Candied a orange peel for topping
Candied Cherry for topping Simply mix together the ricotta, sugar, pinch of cinnamon (if you’d like) chocolate chips all together, then pipe into the fried dough and top with a candied cherry and candied orange peel Additional Ingredients: amarena cherries for the zeppole
Vegetable oil for frying Custard: Heat milk + lemon + vanilla. Whisk yolks + sugar, add flour + cornstarch. Temper, cook ‘til thick, salt, chill. Dough: Boil water, butter, sugar, lemon + salt. Add flour, cook 2 mins. Cool slightly, mix in eggs (+ limoncello) until smooth. Pipe rings →
