Pasta e cucozz just like my nonna and my mamma make it! I love this recipe and for most of my life this is the only way I ate pumpkin (this and my nonna’s grilled and marinated pumpkin 😮💨😮💨) it’s so yummy, so simple yet but truly so delicious!! I used sugar pie pumpkin but butternut squash works just as good (and it’s usually what I use) and it’s truly such a humble dish that lives in our kitchen all year long because we love it that much. Olive oil, garlic and some parsley 1.5lb of cubed pumpkin or BN squash Handful of cherry tomatoes 8 cups of water 1/2lb of pasta mista or ditalini
Plenty of S&P and you must serve it with a ridiculous amount of pepper and parm and an extra drizzle of strong extra virgin olive oil. So good!!
