Crockpot Chickpea and Sweet Potato Stew – Easy and Delicious!

This chickpea and sweet potato stew is THEEEE perfect thing to make for this slow cooker Saturday and it’s totally vegetarian which is an added bonus! Perfectly spiced and beyonddddddd delicious, you’re gonna wanna swim in that broth I promise!! I made a small batch today so I used my 3qt crockpot but if doubling the recipe make sure you use a 5qt 😊 recipe below! RECIPE: 1 15oz can of chickpeas, drained and rinsed
2 medium or 1 large sweet potato, peeled and diced
1 small yellow onion, diced
2 cloves of garlic, minced
2 tsp of ginger paste or freshly grated ginger
1 tbsp of olive oil 1 tsp of garam masala
1 tsp of chili powder
1 tsp of turmeric
1 tsp of cumin 1 cup of coconut milk (full fat)
2 cups of veggie stock
Couple handfuls of greens such as kale, chard, spinach
Salt to taste
Squeeze of lime and cilantro for serving Sautee your onions in the olive oil for a few minutes before adding the garlic followed by the spices and cooking all together just for a minute, then remove to bowl and use some of the stock to deglaze the skillet and lift off any bits and favor. All gets added to a crockpot and I cooked in on low for 2.5 hours then added my greens, cooked for an additional 15 minutes and it was ready! Adjust your seasoning before it’s fully ready and serve over rice. So delish!
